Soft, fragrant Neapolitan fried doughnuts, fried in hot oil until golden and immediately tossed in granulated sugar.

Ingredients

Lievitino

  • Wheat flour (W320)90 g

Method

  1. Lievitino (10 min)
    • Directly in a stand mixer, mix the lukewarm milk with the yeast and the flour.
  2. Riposo del lievitino (20 min)
  3. Patate e uova (20 min)
    • Boil the potatoes, mash them with a potato masher and let them cool to room temperature.
    • Beat the eggs separately, without mixing them with the potatoes.
  4. Impasto (20 min)
    • Add the rest of the flour with half the beaten eggs to the starter, and mix.
    • Add the potatoes (at room temperature) and mix.
    • Add the rest of the eggs in a thin stream, mixing in fully each time.
    • Add the salt, sugar and lemon zest, and mix.
    • Last, add the butter just softened (not creamed), mixing and folding the dough over several times — if it won't come together, put the dough in the fridge to cool down.
  5. Lievitazione (1 hour)
    • Let it double in volume, covered (about an hour in summer — longer at lower temperatures).
  6. Pieghe (29 min)
    • Turn the dough out onto the counter and do a set of tight folds.
    • Cover with plastic wrap.
  7. Riposo dopo le pieghe (30 min)
  8. Formatura (29 min)
    • Divide into 60 g balls, rolled tight.
    • With floured fingers, poke through the centre of each ball, then spin it on your finger to shape the ring, placing it on a lightly floured surface as you go, covered with plastic wrap.
  9. Lievitazione finale (30 min)
  10. Cottura
    • Heat plenty of peanut oil to 170°C (the doughnuts need to float).
    • Fry a few at a time, starting with the side that was facing up.
    • As soon as they stop puffing up, flip them and finish cooking.
  11. Zucchero di rotolatura (2 min)
    • Rotolare le graffe ancora calde nello zucchero semolato.
