Brioche col tuppo

A symbol of Sicilian breakfast and pastry-making, it's a soft, fragrant leavened bun, famous for the small ball on top (the "tuppo", recalling a woman's chignon).

The brioche-style dough is flavoured and enjoyed plain, or filled with ricotta and candied fruit or chocolate chips.

This recipe is freely inspired by, or adapted from, the balance of Maestro Rocco Canavino.

Ingredients

Impasto

  • Wheat flour (W280)500 g
  • Sugar100 g

Ripieno

  • Sheep's milk ricotta250 g

Method

  1. Impasto (30 min)
    • Togliere il burro dal frigo 30 minuti prima e tenerlo a temperatura ambiente; mettere l'acqua in congelatore.
    • Versare in planetaria farina, zucchero, miele, lievito e le scorze di arancia e limone; azionare e aggiungere l'acqua ghiacciata poco alla volta, lavorando a velocità minima finché l'impasto non assorbe tutti i liquidi.
    • Aggiungere le uova a velocità media, per ultimo il sale e il burro morbido.
    • Trasferire sul banco, chiudere a palla e pirlare.
  2. Lievitazione (4 hours)
    • Far lievitare in un contenitore chiuso: dovrà triplicare di volume.
  3. Formatura (15 min)
    • Rimuovere delicatamente l'impasto dal contenitore, facendolo cadere sul banco.
    • Dividere in porzioni da 70 g (la base della brioche) e da 25 g (il tuppo).
    • Pirlare le palline da 70 g e disporle su una teglia foderata di carta da forno, distanziandole a sufficienza: triplicheranno di volume.
    • Pirlare le palline da 25 g; quando pronte, allargare la base della pallina grande fino a vedere il fondo e inserire al centro la pallina piccola.
  4. Lievitazione finale (35 min)
    • Far lievitare in camera di lievitazione tra i 25° e i 30°, fino alla triplicazione del volume.
  5. Cottura (12 min)
    • Sbattere un uovo e pennellare la superficie di tutte le brioche.
    • Cuocere per 11-12 minuti; quando mancano 2 minuti alla fine cottura, girare le teglie.
  6. Ripieno (10 min)
    • Setacciare la ricotta con un setaccio (facoltativo).
    • Aggiungere lo zucchero a velo e poi le gocce di cioccolato (o le scorzette candite).
    • Usare una sacca da pasticciere per farcire.

Preparation notes

Farcitura
Quando le brioche sono fredde, tagliarle a metà (senza separarle del tutto) e farcire con la crema di ricotta usando una sacca da pasticciere.
Gocce di cioccolato
In alternativa, usare 50 g di scorzette candite.
