Panettone: the recipe

Panettone

The king of great Italian leavened baking: a masterpiece of chemical-physical balance and fermentation mastery, famous for its golden dome, its stringy crumb with large, elongated holes and its unmistakable aroma.

It calls for a solid sourdough starter, tied or kept in a water bath, refreshed on a tight schedule to balance its acidity (the lactic/acetic acid ratio) before starting the three doughs.

After dividing, the dough is rounded to build surface tension. Before baking, the traditional cross-shaped cut (called the "scarpata") is made to help the dome develop.

Right after baking, the panettone is skewered at the base and left to cool upside down for 10-12 hours, so its structure — rich in fat and sugar — doesn't collapse under its own weight.

Method

  1. Emulsione al burro (10 min)
    • Montare in planetaria tutti gli ingredienti.
  2. Riposo emulsione (12 hours)
    • Coprire e mettere a 16 °C per 12 ore.
  3. Autolisi (50 min)
    • Impastare gli ingredienti per 30-40 secondi, il tempo necessario alla farina di assorbire i liquidi.
    • Far riposare coperta.
  4. 1° impasto (25 min)
    • Aggiungere agli ingredienti dell'autolisi il latte in polvere e metà dei tuorli e iniziare a impastare.
    • Una volta ben incordato, aggiungere lo zucchero e impastare fino a riottenere una buona incordatura.
    • Versare la seconda metà dei tuorli.
    • Aggiungere il burro a 20 °C.
  5. Lievitazione 1° impasto (12 hours)
    • Riporre in un recipiente delle giuste dimensioni e far lievitare a 26 °C per 12 ore, fino a circa 1,7 volte il volume iniziale.
  6. 2° impasto (25 min)
    • Aggiungere in planetaria il 1° impasto, la farina, l'acqua e la metà dei tuorli.
    • Impastare per circa 17 minuti fino a buona incordatura.
    • Aggiungere lo zucchero, la pasta d'arancia, il latte in polvere e il miele d'acacia.
    • Impastare per 5-7 minuti quindi aggiungere la seconda parte di tuorli.
    • Versare il sale e la panna a filo e, una volta terminato, aggiungere l'emulsione al burro.
    • Infine versare l'uvetta e l'arancia candita, facendole girare per 1-2 minuti.
  7. Puntata (1 hour)
    • Mettere in un recipiente adatto.
  8. Acclimatamento (13 min)
    • Spezzare e mettere a temperatura ambiente per 10-15 minuti.
  9. Pezzatura (3 min)
    • Pirlare e mettere nei pirottini.
  10. Lievitazione finale (5 h 30 min)
    • Lasciare lievitare fino quasi al bordo dei pirottini, con umidità relativa intorno al 75%.
  11. Frigo pre-forno (15 min)
    • Una volta pronto, passare in frigorifero per 15 minuti prima di infornare.
  12. Cottura (50 min)
    • Cuocere il panettone da un chilo, misurando la temperatura al cuore.
